Home-made Mayonnaise

  1. 4 eggs yolks (room temperature)
  2. 1 tablespoons of apple cider vinegar
  3. 1 teaspoon of mustard
  4. 2/3 cups of extra virgin olive oil
  5. 2/3 cups of coconut oil (melted)
  6. Salt and pepper to taste
  7. Step 1: Whisk or blend egg yolks in a bowl until smooth
  8. Step 2: Add apple cider vinegar, mustard, salt and pepper and whisk
  9. Step 3: Continue to whisk, and slowly add in olive oil then coconut oil (start with a drop at a time until oil emulsifies then continue to add).
  10. Step 4: Fill into a tight container, store in the fridge for up to a week and enjoy!
